Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 2 tablespoons paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 12 slider buns
  • 24 dill pickle chips
  • 2 cups shredded coleslaw mix
  • 2 tablespoons vegetable oil

Instructions

  1. 1. Combine paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, black pepper, and salt in a small bowl to create blackening spice blend.
  2. 2. Prepare white sauce by whisking together mayonnaise, apple cider vinegar, horseradish, Dijon mustard, lemon juice, and Worcestershire sauce until smooth. Refrigerate for at least 30 minutes.
  3. 3. Pound chicken breasts to 1/2-inch even thickness and coat generously with blackening spice blend, pressing to adhere.
  4. 4. Heat vegetable oil in a cast-iron skillet over high heat until smoking hot.
  5. 5. Cook chicken for 3-4 minutes per side until blackened crust forms and internal temperature reaches 165 degrees Fahrenheit.
  6. 6. Let chicken rest for 5 minutes, then slice into pieces sized for slider buns.
  7. 7. Toss coleslaw mix with 1/4 cup of white sauce until evenly coated.
  8. 8. Toast slider buns lightly in a dry skillet or under broiler.
  9. 9. Spread white sauce on bottom buns, top with dressed coleslaw, sliced chicken, pickle chips, and additional sauce on top buns.
  10. 10. Serve immediately while chicken is warm and buns are crispy.

Notes

Store cooked chicken and white sauce separately in airtight containers in refrigerator for up to 4 days. White sauce lasts up to 1 week. Do not assemble sliders ahead of time. Adjust cayenne pepper to control heat level. Can substitute chicken thighs for breasts.
