Description

Fluffy, flavorful, and easy-to-make homemade Mexican rice perfect for family dinners or weeknight meals.


Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth (or vegetable broth)
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 cup frozen peas and carrots (optional)

Instructions

  1. Heat oil in a skillet and toast rice until lightly golden.
  2. Add onion and garlic, cooking 1–2 minutes until fragrant.
  3. Stir in tomato sauce, broth, cumin, and salt; bring to a boil.
  4. Reduce heat, cover, and simmer 18–20 minutes until rice is tender.
  5. Fluff with a fork and serve warm.
