- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 2 cups chicken broth (or vegetable broth)
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 cup frozen peas and carrots (optional)
Instructions
- Heat oil in a skillet and toast rice until lightly golden.
- Add onion and garlic, cooking 1–2 minutes until fragrant.
- Stir in tomato sauce, broth, cumin, and salt; bring to a boil.
- Reduce heat, cover, and simmer 18–20 minutes until rice is tender.
- Fluff with a fork and serve warm.
