- 4–5 large carrots, peeled into ribbons
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 2 tbsp fresh cilantro, chopped
- 2 green onions, sliced
- 2 tbsp crushed peanuts or sesame seeds
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey or maple syrup
- 1 tsp fresh ginger, grated
- Salt & pepper, to taste
Instructions
- Peel carrots into ribbons and slice bell pepper, cucumber, and herbs.
- Whisk together soy sauce, rice vinegar, sesame oil, honey, and ginger for the dressing.
- Toss vegetables and carrot ribbons with dressing, sprinkle with sesame seeds or peanuts, and serve immediately.
Notes
- Add edamame, rotisserie chicken, or tofu for extra protein. Adjust dressing sweetness or tang to taste. Serve immediately for crispness or refrigerate ingredients separately for a make-ahead option.
