Description

Ingredients

  • 45 large carrots, peeled into ribbons
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 tbsp fresh cilantro, chopped
  • 2 green onions, sliced
  • 2 tbsp crushed peanuts or sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey or maple syrup
  • 1 tsp fresh ginger, grated
  • Salt & pepper, to taste

Instructions

  1. Peel carrots into ribbons and slice bell pepper, cucumber, and herbs.
  2. Whisk together soy sauce, rice vinegar, sesame oil, honey, and ginger for the dressing.
  3. Toss vegetables and carrot ribbons with dressing, sprinkle with sesame seeds or peanuts, and serve immediately.

Notes

  • Add edamame, rotisserie chicken, or tofu for extra protein. Adjust dressing sweetness or tang to taste. Serve immediately for crispness or refrigerate ingredients separately for a make-ahead option.
