Description

Tender cod fillets baked in a creamy coconut lemon sauce for a simple, elegant, and flavorful meal. Perfect for weeknight dinners or special occasions.


Ingredients

  • 4 cod fillets (6 oz each), fresh or thawed
  • 1 cup full-fat coconut milk
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped parsley or cilantro for garnish
  • Optional: ½–1 cup cherry tomatoes, spinach, or bell peppers

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish. Pat cod dry and season with salt and pepper. Sauté garlic and shallot in olive oil, stir in coconut milk and lemon juice, then pour half the sauce into the baking dish.
  2. Place cod fillets in dish, pour remaining sauce over top, and bake 15–20 minutes until fish flakes easily. Add optional vegetables halfway through baking.
  3. Remove from oven, let rest 2–3 minutes, garnish with parsley or cilantro, and serve with rice, quinoa, or vegetables.

Notes

  • Substitute other mild white fish like tilapia or haddock if desired.
