Ingredients
6 large eggs
1 cup cottage cheese (small-curd recommended)
½ teaspoon salt
¼ teaspoon black pepper
½ cup shredded cheddar or mozzarella cheese (optional)
½ cup chopped vegetables (spinach, bell peppers, or green onions – optional)
Butter or oil, for greasing the dish
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Crack the eggs into a large bowl and whisk until fully combined.
Gently fold in the cottage cheese, salt, and pepper until evenly mixed.
Stir in optional vegetables and shredded cheese, if using.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 25–30 minutes, until the edges are set and the center has a slight jiggle.
Remove from the oven and let rest for 5 minutes before slicing and serving.
