Description

Baked French Toast Muffins are soft, custardy, and easy to make. Perfect for breakfast, brunch, or make-ahead mornings, these muffins are flavorful, sweet, and cozy.


Ingredients

  • 6 cups bread, cubed (day-old works best)
  • 4 large eggs
  • 1 ½ cups milk
  • ⅓ cup sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 tablespoons melted butter
  • Optional: ½ cup berries or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin with grease or liners. Whisk eggs, milk, sugar, brown sugar, cinnamon, vanilla, and salt. Toss bread cubes in the custard and soak 5–10 minutes.
  2. Spoon soaked bread mixture into muffin cups, add optional mix-ins, and drizzle melted butter on top.
  3. Bake 25–30 minutes until golden and set. Cool slightly, then serve warm with syrup or powdered sugar.
