- 1 pound boneless, skinless chicken breast, cut into pieces
- 1 medium carrot, diced
- 1 bell pepper, diced
- ½ cup frozen peas, thawed
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 3 tablespoons soy sauce
- 2 tablespoons sweet chili sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 2 green onions, sliced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: Crushed red pepper flakes, toasted sesame seeds, bean sprouts
Instructions
- Cook chicken in 2 tablespoons oil until golden and cooked through. Remove and set aside.
- Sauté garlic and ginger, then stir-fry vegetables 2-3 minutes. Add cooked rice and mix well.
- Return chicken to skillet, add soy sauce, sweet chili sauce, and sesame oil. Stir until everything is coated. Garnish with green onions and optional sesame seeds.
