Ingredients

  • 3 cups cooked white rice
  • 1 pound boneless, skinless chicken breast, cut into pieces
  • 1 medium carrot, diced
  • 1 bell pepper, diced
  • ½ cup frozen peas, thawed
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: Crushed red pepper flakes, toasted sesame seeds, bean sprouts

Instructions

  1. Cook chicken in 2 tablespoons oil until golden and cooked through. Remove and set aside.
  2. Sauté garlic and ginger, then stir-fry vegetables 2-3 minutes. Add cooked rice and mix well.
  3. Return chicken to skillet, add soy sauce, sweet chili sauce, and sesame oil. Stir until everything is coated. Garnish with green onions and optional sesame seeds.
