  • 1 cup corn
  • 1 cup black beans
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Fresh cilantro or green onions for garnish
  • Extra barbecue sauce for drizzling

Instructions

  1. Begin by marinating the chicken with olive oil, salt, and pepper.
  2. Preheat your grill or stovetop grill pan over medium-high heat.
  3. Add the chicken to the grill and cook for 6–7 minutes on each side, basting with barbecue sauce.
  4. Mix together the cooked rice, corn, and black beans in a large bowl with salt and pepper.
