Delightful spinach balls packed with flavor, perfect for parties and family dinners.


Ingredients

  • 1 package (10 oz) frozen chopped spinach, thawed and drained
  • 1 cup breadcrumbs (gluten-free if preferred)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley or basil
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the thawed and drained spinach with the breadcrumbs in a large bowl.
  3. Add the grated Parmesan cheese and ricotta cheese to the bowl.
  4. Beat the eggs separately and then mix them into the bowl.
  5. Sprinkle in the garlic powder, onion powder, salt, black pepper, and optional red pepper flakes, then fold in the chopped parsley or basil.
  6. Shape the mixture into small balls, about the size of a golf ball, and place them on a greased baking sheet.
  7. Spray the formed balls with cooking oil for a golden color.
  8. Bake for about 20 minutes or until golden-brown.

Notes

For a vegan version, replace eggs with flaxseed meal and use chickpea flour instead of cheese. For a low-carb option, use almond flour or crushed pork rinds instead of breadcrumbs.
