- 1 package (10 oz) frozen chopped spinach, thawed and drained
- 1 cup breadcrumbs (gluten-free if preferred)
- 1/2 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chopped fresh parsley or basil
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the thawed and drained spinach with the breadcrumbs in a large bowl.
- Add the grated Parmesan cheese and ricotta cheese to the bowl.
- Beat the eggs separately and then mix them into the bowl.
- Sprinkle in the garlic powder, onion powder, salt, black pepper, and optional red pepper flakes, then fold in the chopped parsley or basil.
- Shape the mixture into small balls, about the size of a golf ball, and place them on a greased baking sheet.
- Spray the formed balls with cooking oil for a golden color.
- Bake for about 20 minutes or until golden-brown.
Notes
For a vegan version, replace eggs with flaxseed meal and use chickpea flour instead of cheese. For a low-carb option, use almond flour or crushed pork rinds instead of breadcrumbs.
