- 1/2 cup unsalted butter, melted
- 1 cup light brown sugar
- 1/2 cup Biscoff cookie butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix melted butter, brown sugar, and cookie butter until smooth.
- Add egg and vanilla, then stir until combined.
- Fold in flour, baking powder, and salt gently.
- Spread batter evenly in the pan and smooth the top.
- Bake for 22–25 minutes until edges are set and center is slightly soft.
- Cool completely before slicing.
Notes
- For extra flavor, swirl additional cookie butter on top before baking. Do not overbake to keep the blondies chewy.
