- 1 medium red bell pepper, diced
- 1 medium yellow bell pepper, diced (optional)
- 1 small red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 small jalapeño, minced (optional)
- 1 can (15 oz) black beans, rinsed and drained
- ½ cup corn kernels, fresh or thawed frozen
- 2 tablespoons olive oil
- 2 tablespoons lime juice, freshly squeezed
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon honey or agave (optional)
- Optional extras: ½ avocado diced, ½ cup cherry tomatoes halved, 2 tablespoons pumpkin seeds
Instructions
- Prepare all ingredients as directed. Rinse beans, dice mango, bell peppers, and onion. Chop cilantro and mince jalapeño.
- Whisk together olive oil, lime juice, honey, salt, and pepper for the dressing.
- In a large bowl, combine black beans, mango, peppers, onion, corn, and cilantro. Toss gently with dressing.
- Fold in avocado, cherry tomatoes, or pumpkin seeds if using.
- Serve immediately or store in an airtight container in the fridge for up to 2 days (add avocado just before serving).
