Description

A colorful, healthy, and refreshing salad featuring sweet mango, hearty black beans, crisp bell peppers, and zesty lime dressing. Perfect for meal prep, lunch, or a light dinner.


Ingredients

  • 1 large ripe mango, diced
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced (optional)
  • 1 small red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, minced (optional)
  • 1 can (15 oz) black beans, rinsed and drained
  • ½ cup corn kernels, fresh or thawed frozen
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice, freshly squeezed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon honey or agave (optional)
  • Optional extras: ½ avocado diced, ½ cup cherry tomatoes halved, 2 tablespoons pumpkin seeds

Instructions

  1. Prepare all ingredients as directed. Rinse beans, dice mango, bell peppers, and onion. Chop cilantro and mince jalapeño.
  2. Whisk together olive oil, lime juice, honey, salt, and pepper for the dressing.
  3. In a large bowl, combine black beans, mango, peppers, onion, corn, and cilantro. Toss gently with dressing.
  4. Fold in avocado, cherry tomatoes, or pumpkin seeds if using.
  5. Serve immediately or store in an airtight container in the fridge for up to 2 days (add avocado just before serving).
