  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/2 cup milk (or a non-dairy substitute like almond or oat milk)
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen)
  • Optional: 1/2 teaspoon cinnamon
  • Optional: Zest of one lemon

Instructions

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Add in the cold, diced butter and work it into the flour mixture until it resembles coarse crumbs.
  4. Create a well in the center of the mixture and pour in the milk and vanilla extract. Stir gently until just combined.
  5. Fold in the blueberries carefully to avoid breaking them.
  6. Drop clusters of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
