Description

A creamy, flavorful dip combining Boursin cheese with fresh tomatoes, basil, and garlic for the perfect appetizer


Ingredients

  • 2 packages Boursin cheese (garlic and herb, 5.2 oz each)
  • 8 oz cream cheese, softened
  • 3 medium Roma tomatoes, diced
  • 1/2 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. 1. Preheat oven to 375°F and ensure all cheeses are at room temperature for easy mixing.
  2. 2. In a medium bowl, beat together Boursin cheese and cream cheese until smooth and fluffy, about 2 minutes.
  3. 3. Fold in half of the mozzarella and all of the Parmesan cheese, mixing until evenly distributed.
  4. 4. Spread the cheese mixture into a shallow baking dish, creating an even layer.
  5. 5. Dice tomatoes and drain in a colander for 10 minutes, then pat dry with paper towels.
  6. 6. In a separate bowl, combine drained tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper.
  7. 7. Bake the cheese base uncovered for 15 minutes until heated through and bubbly.
  8. 8. Remove from oven, sprinkle remaining mozzarella on top, then add the tomato mixture.
  9. 9. Return to oven for 5-7 minutes until cheese melts and tomatoes are warmed.
  10. 10. Let rest for 5 minutes before serving with toasted baguette slices, crackers, or vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be prepared up to 24 hours ahead and baked just before serving. For a cold version, skip baking and serve chilled.
