A creamy, flavorful dip combining Boursin cheese with fresh tomatoes, basil, and garlic for the perfect appetizer

- 2 packages Boursin cheese (garlic and herb, 5.2 oz each)
- 8 oz cream cheese, softened
- 3 medium Roma tomatoes, diced
- 1/2 cup fresh basil, chopped
- 3 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
Instructions
- 1. Preheat oven to 375°F and ensure all cheeses are at room temperature for easy mixing.
- 2. In a medium bowl, beat together Boursin cheese and cream cheese until smooth and fluffy, about 2 minutes.
- 3. Fold in half of the mozzarella and all of the Parmesan cheese, mixing until evenly distributed.
- 4. Spread the cheese mixture into a shallow baking dish, creating an even layer.
- 5. Dice tomatoes and drain in a colander for 10 minutes, then pat dry with paper towels.
- 6. In a separate bowl, combine drained tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper.
- 7. Bake the cheese base uncovered for 15 minutes until heated through and bubbly.
- 8. Remove from oven, sprinkle remaining mozzarella on top, then add the tomato mixture.
- 9. Return to oven for 5-7 minutes until cheese melts and tomatoes are warmed.
- 10. Let rest for 5 minutes before serving with toasted baguette slices, crackers, or vegetables.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be prepared up to 24 hours ahead and baked just before serving. For a cold version, skip baking and serve chilled.
