- 4 boneless, skinless chicken breasts
- 1 cup fresh or canned pineapple chunks (reserve juice for marinating)
- 1/2 cup brown sugar
- 1/4 cup soy sauce (low-sodium recommended)
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger (or 1 teaspoon ground ginger)
- Salt and pepper, to taste
- Optional: 1 teaspoon red pepper flakes
- Optional: Fresh cilantro or green onions for garnish
Instructions
- Begin by marinating the chicken. In a large bowl, combine the soy sauce, brown sugar, pineapple juice, minced garlic, and grated ginger. Mix well until the sugar dissolves slightly. Place the chicken breasts in the marinade, making sure they’re well coated. Let them marinate for at least 15-20 minutes.
- Once the chicken has marinated, heat olive oil in a large skillet over medium-high heat. Take the chicken out of the marinade, setting the marinade aside for later use. Sear the chicken breasts for about 5-7 minutes on each side until golden brown and cooked through.
- After the chicken is cooked, remove it from the skillet and let it rest. In the same skillet, pour in the reserved marinade and bring it to a boil. Reduce the heat and let it simmer for about 5 minutes until it thickens slightly.
- Once the sauce has thickened, return the chicken to the skillet. Spoon the sauce over the chicken and add the pineapple chunks. Let everything simmer together for another 3-4 minutes.
- Serve your Brown Sugar Pineapple Chicken hot, garnished with fresh cilantro or sliced green onions.

For a healthier option, use low-sodium soy sauce and consider a sugar substitute.
