Description

Tender chicken thighs cooked in a sweet and savory brown sugar pineapple sauce, perfect for a quick family dinner.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • ½ cup brown sugar, packed
  • 1 cup fresh pineapple, chopped
  • ¼ cup soy sauce (low-sodium)
  • 3 cloves garlic, minced
  • 2 tsp apple cider vinegar
  • 2 tbsp olive oil or vegetable oil
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper (optional)

Instructions

  1. Combine brown sugar, soy sauce, garlic, and vinegar; marinate chicken for 30–120 minutes.
  2. Sauté pineapple with black pepper and optional red pepper in a medium pan, then add remaining marinade.
  3. Sear chicken in a skillet for 4–5 minutes per side, reduce heat, pour in sauce, and simmer 5 minutes. Serve hot.
