  • 4 boneless, skinless chicken breasts (68 oz each)
  • 8 oz fresh mozzarella cheese, sliced
  • 4 medium Roma tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. 1. Preheat oven to 375 degrees Fahrenheit and pat chicken breasts dry with paper towels.
  2. 2. Season both sides of chicken with salt, pepper, and Italian seasoning, then let rest for 15 minutes at room temperature.
  3. 3. Combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, and a pinch of salt in a bowl. Let sit for 20 minutes.
  4. 4. Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat until shimmering.
  5. 5. Sear chicken breasts for 3-4 minutes per side until golden brown, then transfer skillet to preheated oven.
  6. 6. Bake for 15 minutes, then top each breast with mozzarella slices and return to oven for 5 more minutes.
  7. 7. Remove from oven when internal temperature reaches 165 degrees Fahrenheit and cheese is melted.
  8. 8. Top each chicken breast with prepared bruschetta mixture and sprinkle with Parmesan cheese.
  9. 9. Let rest for 5 minutes before serving to allow juices to redistribute.

Notes

Store leftovers in an airtight container for up to 4 days. Keep bruschetta topping separate if possible. Reheat in a 350-degree oven covered with foil. Bruschetta mixture can be prepared up to 2 days in advance and stored refrigerated.
