- 4 boneless, skinless chicken breasts (6–8 oz each)
- 8 oz fresh mozzarella cheese, sliced
- 4 medium Roma tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- 1. Preheat oven to 375 degrees Fahrenheit and pat chicken breasts dry with paper towels.
- 2. Season both sides of chicken with salt, pepper, and Italian seasoning, then let rest for 15 minutes at room temperature.
- 3. Combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, and a pinch of salt in a bowl. Let sit for 20 minutes.
- 4. Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat until shimmering.
- 5. Sear chicken breasts for 3-4 minutes per side until golden brown, then transfer skillet to preheated oven.
- 6. Bake for 15 minutes, then top each breast with mozzarella slices and return to oven for 5 more minutes.
- 7. Remove from oven when internal temperature reaches 165 degrees Fahrenheit and cheese is melted.
- 8. Top each chicken breast with prepared bruschetta mixture and sprinkle with Parmesan cheese.
- 9. Let rest for 5 minutes before serving to allow juices to redistribute.
Notes
Store leftovers in an airtight container for up to 4 days. Keep bruschetta topping separate if possible. Reheat in a 350-degree oven covered with foil. Bruschetta mixture can be prepared up to 2 days in advance and stored refrigerated.
