  • 1.5 pounds boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 2 celery stalks, diced
  • 1 cup shredded carrots
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup blue cheese crumbles
  • 1/2 cup ranch dressing
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. 1. Season chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Alternatively, grill or bake the chicken at 400°F for 20-25 minutes.
  2. 2. Remove chicken from heat and let rest for 5 minutes, then slice or dice into bite-sized pieces.
  3. 3. Place chicken pieces in a bowl and toss with buffalo sauce until thoroughly coated.
  4. 4. In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, diced celery, shredded carrots, and sliced red onion.
  5. 5. Top the salad with buffalo-coated chicken pieces.
  6. 6. Drizzle ranch dressing over the salad and sprinkle with blue cheese crumbles.
  7. 7. Toss everything together just before serving, or serve with dressing on the side for individual customization.
