- 2 cans of butter beans, drained and rinsed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup of vegetable or chicken broth
- 1 can of diced tomatoes, with juices
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 bay leaf
- Optional: 1 cup of spinach or kale for added greens
- Optional: Croutons or fresh herbs for garnish
Instructions
- Begin by heating the olive oil in a large pot over medium heat. Once it’s warm, toss in the diced onion, carrots, and celery. Sauté everything for about 5-7 minutes until the vegetables begin to soften. Stir occasionally to prevent sticking.
- Next, add the minced garlic and cook for another 1-2 minutes until fragrant. Garlic can burn quickly, so keep an eye on it!
- Add the drained butter beans, diced tomatoes with juices, vegetable or chicken broth, thyme, rosemary, and bay leaf to the pot. Stir thoroughly to combine all those fabulous flavors.
- Season with salt and pepper to taste. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 20 minutes. This gives the flavors time to meld beautifully.
- If you’re adding spinach or kale, stir them into the pot during the last 5 minutes of cooking. They’ll wilt down nicely without losing their vibrant color.
- Once the soup is ready, remove the bay leaf and give it a taste. Adjust your seasoning as needed before serving.
- For serving, ladle the soup into bowls and add a sprinkle of croutons or fresh herbs for a delightful finishing touch.

This soup is vegan and gluten-free if you use vegetable broth and ensure it’s gluten-free.
