Description

Ingredients

  • 2 cans of butter beans, drained and rinsed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup of vegetable or chicken broth
  • 1 can of diced tomatoes, with juices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Optional: 1 cup of spinach or kale for added greens
  • Optional: Croutons or fresh herbs for garnish

Instructions

  1. Begin by heating the olive oil in a large pot over medium heat. Once it’s warm, toss in the diced onion, carrots, and celery. Sauté everything for about 5-7 minutes until the vegetables begin to soften. Stir occasionally to prevent sticking.
  2. Next, add the minced garlic and cook for another 1-2 minutes until fragrant. Garlic can burn quickly, so keep an eye on it!
  3. Add the drained butter beans, diced tomatoes with juices, vegetable or chicken broth, thyme, rosemary, and bay leaf to the pot. Stir thoroughly to combine all those fabulous flavors.
  4. Season with salt and pepper to taste. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 20 minutes. This gives the flavors time to meld beautifully.
  5. If you’re adding spinach or kale, stir them into the pot during the last 5 minutes of cooking. They’ll wilt down nicely without losing their vibrant color.
  6. Once the soup is ready, remove the bay leaf and give it a taste. Adjust your seasoning as needed before serving.
  7. For serving, ladle the soup into bowls and add a sprinkle of croutons or fresh herbs for a delightful finishing touch.

Notes

This soup is vegan and gluten-free if you use vegetable broth and ensure it’s gluten-free.
