This Cajun Pasta Salad is creamy, flavorful, and easy to make. Packed with seasoned chicken, fresh vegetables, and bold Cajun spices, it’s perfect for family meals, potlucks, or meal prep.

- 12 oz rotini or penne pasta
- 2 cups cooked chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, chopped
- ½ cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- ¾ cup mayonnaise
- ¼ cup sour cream
- 1½ tbsp Cajun seasoning
Instructions
- Cook pasta in salted water until al dente, then drain and rinse with cold water.
- In a large bowl, whisk mayonnaise, sour cream, and Cajun seasoning until smooth.
- Add pasta, chicken, vegetables, and cheese. Toss gently to coat.
- Cover and chill for 30 minutes before serving. Stir and adjust seasoning if needed.
Notes
- Adjust Cajun seasoning to control spice level.
- Add extra dressing before serving if pasta absorbs moisture.
- Store leftovers in the fridge for up to three days.
