- 1.5 lbs chicken breasts or chicken thighs
- 2 tbsp vegetable oil or butter
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups long-grain white rice
- 3 cups chicken broth
- 1 cup peas and carrots mix
- 1 tsp ground allspice
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp dried thyme
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tbsp lime juice
- Fresh cilantro for garnish (optional)
Instructions
- Heat oil or butter in a large pot over medium heat.
- Add seasoned chicken and cook until lightly browned on both sides.
- Stir in onion, bell pepper, and garlic until softened.
- Add rice, broth, peas, carrots, and all spices. Stir to combine.
- Bring to a light boil, then reduce heat and cover.
- Simmer for 18–22 minutes, until rice is tender and broth is absorbed.
- Squeeze lime juice over the pot and fluff the rice with a fork.
- Garnish with cilantro and serve warm.
