  • 1.5 lbs chicken breasts or chicken thighs
  • 2 tbsp vegetable oil or butter
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 cup peas and carrots mix
  • 1 tsp ground allspice
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tbsp lime juice
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat oil or butter in a large pot over medium heat.
  2. Add seasoned chicken and cook until lightly browned on both sides.
  3. Stir in onion, bell pepper, and garlic until softened.
  4. Add rice, broth, peas, carrots, and all spices. Stir to combine.
