- 2 cups shredded carrots
- 2 cups diced apples
- ½ cup raisins
- ½ cup chopped walnuts
- ½ cup Greek yogurt or mayonnaise
- 1 tbsp lemon juice
- 1–2 tsp honey
- ¼ tsp salt
- ½ tsp cinnamon (optional)
Instructions
- Shred carrots and dice apples, tossing apples with lemon juice to prevent browning.
- In a small bowl, whisk Greek yogurt or mayonnaise with honey, salt, and cinnamon.
- In a large bowl, combine carrots, apples, raisins, and walnuts. Pour dressing over and toss gently.
- Chill for at least 30 minutes before serving. Stir and adjust sweetness or tang if needed.

- Adjust honey for desired sweetness.
- Nut-free version: omit walnuts or substitute with sunflower seeds.
- Store leftovers in the refrigerator for up to three days.
