- 2 cups shredded carrots

Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch cake pans. Mix dry ingredients in a bowl, whisk wet ingredients separately, then fold together. Add shredded carrots and optional mix-ins.
- Pour batter into pans and bake 30–35 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
- Prepare cream cheese frosting, frost cake layers, and top with optional walnuts or carrot curls. Slice and serve.
