Cake:
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 3 large eggs
- ¾ cup granulated sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1 cup finely grated carrots
Filling:
- 8 oz cream cheese, softened
- 2 tbsp unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Line a jelly roll pan with parchment paper. Mix dry ingredients in one bowl and wet ingredients in another. Combine gently and fold in carrots.
- Spread batter evenly in pan and bake 10–12 minutes. Roll cake warm with a towel and cool completely.
- Unroll, spread filling evenly, re-roll tightly, chill, then slice and serve.
