A comforting and nutritious soup made with carrots, lentils, and spices that warms the soul.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 3–4 large carrots, diced
- 1 cup lentils (red or green), rinsed and drained
- 6 cups vegetable broth or water
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Optional: 1 teaspoon turmeric for extra flavor and color
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Heat the olive oil over medium heat in a large pot.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic for about 30 seconds until fragrant.
- Add the diced carrots and sauté for 5-7 minutes until they start to soften.
- Pour in the lentils and vegetable broth, then add spices and stir well.
- Bring the mixture to a gentle boil, then reduce heat and let it simmer for 25-30 minutes.
- Remove from heat and let cool slightly, then blend part of the soup for a creamy texture if desired.
- Season with salt and pepper to taste and serve with fresh herbs on top.
Notes
For a vegan version, ensure the broth is vegan or use water. Could also substitute lentils with chickpeas for different texture.
