Description

A comforting and nutritious soup made with carrots, lentils, and spices that warms the soul.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 34 large carrots, diced
  • 1 cup lentils (red or green), rinsed and drained
  • 6 cups vegetable broth or water
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Optional: 1 teaspoon turmeric for extra flavor and color
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic for about 30 seconds until fragrant.
  4. Add the diced carrots and sauté for 5-7 minutes until they start to soften.
  5. Pour in the lentils and vegetable broth, then add spices and stir well.
  6. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 25-30 minutes.
  7. Remove from heat and let cool slightly, then blend part of the soup for a creamy texture if desired.
  8. Season with salt and pepper to taste and serve with fresh herbs on top.

Notes

For a vegan version, ensure the broth is vegan or use water. Could also substitute lentils with chickpeas for different texture.
