Ingredients
Scale
3 large carrots
1 tbsp olive oil
1 tbsp lemon juice
Salt + pepper to taste
2 tbsp chopped parsley
1 tbsp sunflower or pumpkin seeds
Instructions
Peel carrots into ribbons using a Y-peeler.
Mix olive oil, lemon juice, salt, and pepper.
Toss ribbons with dressing and herbs.
Top with seeds and serve immediately.
