Ingredients

  • 1 (30 oz) bag shredded hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
  • 1/2 cup butter, melted (or ghee/olive oil)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups crushed cornflakes
  • 1 tsp paprika (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, mix hash browns, 1½ cups cheese, sour cream, melted butter, cream soup, onion, garlic, salt, and pepper.
  2. Grease a 9×13-inch baking dish. Spread the mixture evenly, top with remaining ½ cup cheese, and sprinkle cornflakes mixed with paprika and butter.
  3. Bake 45–50 minutes until golden and bubbly. Let rest 5–10 minutes before serving.
