- 1 pound ground beef, chicken, or turkey sausage
- 2 tablespoons taco seasoning
- 1 tablespoon olive or vegetable oil
- 1 medium onion, diced
- 1 cup diced bell peppers
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8–10 small flour or corn tortillas (6-inch)
- ½ cup sour cream (optional)
- ½ cup salsa or pico de gallo
- 2 tablespoons chopped cilantro (optional)
- 1–2 sliced jalapeños (optional)
- 1–2 lime wedges for serving
Instructions
- Heat oil in a skillet and cook your chosen protein until browned. Stir in taco seasoning and water, simmering until absorbed.
- Sauté onions and bell peppers in the same pan until softened, then add garlic. Mix vegetables with the cooked protein.
- Preheat oven to 375°F. Fill tortillas with meat and vegetables, sprinkle cheese on top, roll or fold, and place in a greased baking dish.
- Bake for 10–12 minutes until cheese is melted and bubbly. Broil 1–2 minutes for crisp edges if desired.
- Garnish with cilantro, jalapeños, sour cream, salsa, and lime wedges. Serve warm.
