Ingredients

  • 1 pound ground beef, chicken, or turkey sausage
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive or vegetable oil
  • 1 medium onion, diced
  • 1 cup diced bell peppers
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 810 small flour or corn tortillas (6-inch)
  • ½ cup sour cream (optional)
  • ½ cup salsa or pico de gallo
  • 2 tablespoons chopped cilantro (optional)
  • 12 sliced jalapeños (optional)
  • 12 lime wedges for serving

Instructions

  1. Heat oil in a skillet and cook your chosen protein until browned. Stir in taco seasoning and water, simmering until absorbed.
  2. Sauté onions and bell peppers in the same pan until softened, then add garlic. Mix vegetables with the cooked protein.
  3. Preheat oven to 375°F. Fill tortillas with meat and vegetables, sprinkle cheese on top, roll or fold, and place in a greased baking dish.
  4. Bake for 10–12 minutes until cheese is melted and bubbly. Broil 1–2 minutes for crisp edges if desired.
  5. Garnish with cilantro, jalapeños, sour cream, salsa, and lime wedges. Serve warm.
