A heartwarming Chicken Bruschetta Casserole filled with tender chicken, fresh basil, and tomatoes, baked to perfection.


Ingredients

  • 4 cups cooked, shredded chicken (rotisserie chicken works beautifully)
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 1 cup cream (or sour cream/Greek yogurt)
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional)
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, halved cherry tomatoes, chopped basil, half of the mozzarella cheese, and a sprinkle of salt and pepper in a large bowl.
  3. Mix together the cream, minced garlic, onion powder, Italian seasoning, and additional salt and pepper in another bowl.
  4. Pour the creamy mixture into the chicken and tomato blend, stirring until everything is evenly coated.
  5. Transfer the chicken mixture into a greased baking dish and spread it out evenly.
  6. Sprinkle the remaining mozzarella cheese over the top and optional breadcrumbs mixed with olive oil for crunch.
  7. Bake for 25-30 minutes until bubbling and cheese is golden brown.
  8. Cool for a few minutes before serving.
