- 4 cups cooked, shredded chicken (rotisserie chicken works beautifully)
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 1 cup cream (or sour cream/Greek yogurt)
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup breadcrumbs (optional)
- Olive oil (for drizzling)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, halved cherry tomatoes, chopped basil, half of the mozzarella cheese, and a sprinkle of salt and pepper in a large bowl.
- Mix together the cream, minced garlic, onion powder, Italian seasoning, and additional salt and pepper in another bowl.
- Pour the creamy mixture into the chicken and tomato blend, stirring until everything is evenly coated.
- Transfer the chicken mixture into a greased baking dish and spread it out evenly.
- Sprinkle the remaining mozzarella cheese over the top and optional breadcrumbs mixed with olive oil for crunch.
- Bake for 25-30 minutes until bubbling and cheese is golden brown.
- Cool for a few minutes before serving.
