- 2 boneless, skinless chicken breasts (12 oz)
- 8 oz pasta (rotini or penne)
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved (optional)
- 1/2 cup Parmesan, grated
- 1 cup croutons
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp anchovy paste (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Cook chicken in olive oil until fully cooked. Slice into strips.
- Boil pasta until al dente, then rinse under cold water.
- Whisk mayonnaise, garlic, mustard, lemon juice, salt, pepper, and anchovy paste for dressing.
- Toss pasta, lettuce, cherry tomatoes, and half Parmesan with dressing.
- Add sliced chicken, top with remaining Parmesan, croutons, and parsley. Serve immediately.

- Store dressing separately if making ahead.
- Add croutons just before serving for crunch.
- Substitute dairy-free cheese and mayo for a vegan-friendly version.
