Ingredients

  • 2 boneless, skinless chicken breasts (12 oz)
  • 8 oz pasta (rotini or penne)
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved (optional)
  • 1/2 cup Parmesan, grated
  • 1 cup croutons
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp anchovy paste (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook chicken in olive oil until fully cooked. Slice into strips.
  2. Boil pasta until al dente, then rinse under cold water.
  3. Whisk mayonnaise, garlic, mustard, lemon juice, salt, pepper, and anchovy paste for dressing.
  4. Toss pasta, lettuce, cherry tomatoes, and half Parmesan with dressing.
  5. Add sliced chicken, top with remaining Parmesan, croutons, and parsley. Serve immediately.
