Description

Delicious Chicken Caesar sandwiches combine rich Caesar dressing, tender chicken, and crunchy romaine, all between slices of crusty bread.


Ingredients

  • 2 cups cooked chicken, shredded or sliced
  • 1 cup romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • 4 slices of crusty bread
  • Optional: ¼ cup bacon alternatives, cooked and crumbled
  • Optional: sliced tomatoes

Instructions

  1. Start by preheating a skillet over medium heat. If using fresh chicken, season it with salt and pepper, and grill or sauté until cooked through. If using rotisserie chicken, skip this step.
  2. In a large mixing bowl, combine the chopped romaine lettuce, shredded chicken, and Caesar dressing. Toss until coated.
  3. Add the grated Parmesan cheese to the mixture and mix well.
  4. If including bacon alternatives or sliced tomatoes, fold them into the mixture.
  5. Spread the chicken Caesar mixture over two slices of bread. Top with the remaining slices to complete the sandwiches.
  6. Toast the sandwiches in the skillet for about 2-3 minutes on each side until golden brown and crispy.

Notes

For a lighter option, use low-fat dressing or lettuce wraps. Store leftovers separately for best results.
