Ingredients

  • lb boneless chicken thighs, chopped
  • 1½ cups long-grain white rice
  • 8 oz chicken sausage, sliced
  • 1 large onion, diced
  • 2 bell peppers, diced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 cup crushed tomatoes
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • Salt and black pepper to taste

Instructions

  1. Heat oil in a large pot. Brown chicken, then remove.
  2. Cook vegetables and garlic. Stir in seasoning.
  3. Add chicken, sausage, rice, tomatoes, and broth.
  4. Simmer covered until rice is tender.
  5. Rest 5 minutes, fluff, and serve.
