- 1½ lb boneless chicken thighs, chopped
- 1½ cups long-grain white rice
- 8 oz chicken sausage, sliced
- 1 large onion, diced
- 2 bell peppers, diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 cup crushed tomatoes
- 2 tbsp olive oil
- 2 tsp Cajun seasoning
- 1 tsp paprika
- Salt and black pepper to taste
Instructions
- Heat oil in a large pot. Brown chicken, then remove.
- Cook vegetables and garlic. Stir in seasoning.
- Add chicken, sausage, rice, tomatoes, and broth.
- Simmer covered until rice is tender.
- Rest 5 minutes, fluff, and serve.
