Ingredients

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 12 oz pasta (penne, rotini, or fusilli)
  • 2 cups shredded mozzarella cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • ½ cup grated Parmesan cheese (optional)
  • 1 cup cherry tomatoes, halved (optional)
  • Fresh basil for garnish

Instructions

  1. Cook pasta until al dente. Sauté chicken in butter and olive oil, season with salt, pepper, and Italian seasoning.
  2. In the same skillet, sauté garlic, add heavy cream, then gradually melt in mozzarella and Parmesan until smooth.
  3. Combine pasta and chicken with sauce, fold in cherry tomatoes and basil, and serve immediately.
