- 1 ½ cups pineapple chunks (fresh or canned, drained)
- 2 tbsp olive oil
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 1 tsp garlic powder
- 1 tsp ground cumin
- ¾ tsp salt
- ½ tsp black pepper
- 8 small flour tortillas
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until lightly browned and cooked through.
- Sprinkle in garlic powder, cumin, salt, and pepper. Stir well. Add onion and bell pepper, cooking until softened.
- Fold in pineapple and cook for 2–3 minutes until warmed through.
- Warm tortillas, fill with the chicken and pineapple mixture, and serve immediately.
