Description

A classic American salad loaded with chicken, bacon, eggs, avocado, and blue cheese, topped with a tangy red wine vinaigrette


Ingredients

  • 6 cups romaine lettuce, chopped
  • 4 cups iceberg lettuce, chopped
  • 2 cups cooked chicken breast, diced
  • 8 bacon strips, cooked and crumbled
  • 4 large hard-boiled eggs, chopped
  • 2 cups cherry tomatoes, halved
  • 2 medium avocados, diced
  • 1 cup blue cheese, crumbled
  • 1/4 cup red onion, finely diced
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. 1. Prepare the dressing by whisking together red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Slowly drizzle in olive oil while whisking continuously until emulsified. Set aside.
  2. 2. Cook bacon until crispy, then drain on paper towels and crumble once cooled.
  3. 3. Season chicken breast with salt and pepper, then grill or bake until internal temperature reaches 165°F. Let rest for 5 minutes, then dice into bite-sized pieces.
  4. 4. Prepare hard-boiled eggs by placing in cold water, bringing to a boil, removing from heat, and letting stand covered for 12 minutes. Transfer to ice bath, then peel and chop.
  5. 5. Wash and thoroughly dry lettuce, then chop into bite-sized pieces and place in a large serving bowl or platter.
  6. 6. Arrange chicken, bacon, eggs, tomatoes, avocado, and blue cheese in neat rows over the lettuce, or toss everything together for a mixed presentation.
  7. 7. Sprinkle red onion over the top and drizzle with dressing just before serving, or serve dressing on the side.
  8. 8. Toss gently if desired and serve immediately for best texture and freshness.

Notes

Store undressed salad components separately in airtight containers for up to 3 days. Add avocado and dressing just before serving. For meal prep, keep components separate and assemble fresh daily. Leftover dressed salad should be consumed within 24 hours.
