Description

A delightful fusion of cinnamon rolls and banana bread, this recipe is perfect for using overripe bananas while indulging in warm cinnamon flavors.

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1 cup granulated sugar (or coconut sugar)
  • 1/2 cup unsalted butter, melted (or coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar (for topping)
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add the melted butter and sugar; mix until combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Whisk together the flour, baking soda, salt, and cinnamon in another bowl.
  6. Fold the dry ingredients into the wet mixture gently to avoid overmixing.
  7. Mix in brown sugar and optional nuts or chocolate chips.
  8. Pour batter into the loaf pan and create a cinnamon roll swirl if desired.
  9. Bake for 55 to 65 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For healthier alternatives, use flax eggs for a vegan option or replace sugar with a low-carb sweetener. Serve with a glaze, whipped cream, or toast with almond butter.
