- 8 oz pasta (penne, rotini, or shells)
- 2 cups cooked chicken, diced
- 1 cup diced carrots
- 1 cup peas
- 1 cup corn kernels
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- Salt & pepper, to taste
- 2 tbsp chopped parsley (optional garnish)
Instructions
- Cook pasta until al dente, drain, and cool slightly. Dice chicken and prep vegetables.
- In a skillet, melt butter, whisk in flour, and gradually add milk. Stir until thickened, then add cheese, salt, pepper, and herbs.
- Combine pasta, chicken, and vegetables with the sauce. Toss gently and serve warm, garnished with parsley if desired.
Notes
- Swap chicken for turkey or leftover rotisserie meat. Add mushrooms or roasted peppers for extra flavor. For a lighter version, use half-and-half or Greek yogurt instead of some milk.
