Description

Classic Chicken Pot Pie Pasta is a creamy, comforting dish that combines tender chicken, colorful vegetables, and pasta in a rich, cheesy sauce. Perfect for weeknight dinners, family gatherings, or meal prep.


Ingredients

  • 8 oz pasta (penne, rotini, or shells)
  • 2 cups cooked chicken, diced
  • 1 cup diced carrots
  • 1 cup peas
  • 1 cup corn kernels
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • Salt & pepper, to taste
  • 2 tbsp chopped parsley (optional garnish)

Instructions

  1. Cook pasta until al dente, drain, and cool slightly. Dice chicken and prep vegetables.
  2. In a skillet, melt butter, whisk in flour, and gradually add milk. Stir until thickened, then add cheese, salt, pepper, and herbs.
  3. Combine pasta, chicken, and vegetables with the sauce. Toss gently and serve warm, garnished with parsley if desired.

Notes

  • Swap chicken for turkey or leftover rotisserie meat. Add mushrooms or roasted peppers for extra flavor. For a lighter version, use half-and-half or Greek yogurt instead of some milk.
