Description

These Coffee Cake Cookies are soft, chewy, and filled with sweet cinnamon-sugar swirls. Perfect for breakfast, brunch, or coffee time, they combine all the flavors of classic coffee cake in cookie form.


Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 tablespoons brown sugar + 1 teaspoon cinnamon for swirl

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment.
  2. Cream butter and sugars, then beat in egg and vanilla. Mix in dry ingredients until combined.
  3. Flatten dough slightly, sprinkle with cinnamon-sugar swirl, and gently fold in.
  4. Place dough balls on the sheet, 2 inches apart. Bake 10–12 minutes until edges are lightly golden.
  5. Cool on the sheet for 5 minutes, then transfer to wire rack. Serve warm.

Notes

  • Add chopped nuts or mini chocolate chips for extra flavor.
