Description

A creamy and hearty salad featuring cottage cheese, chickpeas, fresh vegetables, and a zesty lemon dressing. Perfect for lunch, dinner, or meal prep.


Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 cup canned chickpeas, drained and rinsed
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Drain and rinse chickpeas. Chop vegetables and add to a mixing bowl.
  2. Mix cottage cheese with olive oil, lemon juice, salt, and pepper.
  3. Fold the cottage cheese mixture into the chickpeas and veggies. Adjust seasoning and serve fresh.

Notes

  • Best served fresh, but can be stored in the fridge for 2–3 days.
