- 1 cup cottage cheese (full-fat or low-fat)
- 1 cup canned chickpeas, drained and rinsed
- ½ cup cherry tomatoes, halved
- ½ cup cucumber, diced
- 2 tablespoons red onion, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Drain and rinse chickpeas. Chop vegetables and add to a mixing bowl.
- Mix cottage cheese with olive oil, lemon juice, salt, and pepper.
- Fold the cottage cheese mixture into the chickpeas and veggies. Adjust seasoning and serve fresh.
Notes
- Best served fresh, but can be stored in the fridge for 2–3 days.
- Add delicate vegetables like cucumber and tomatoes just before serving for extra crunch.
