  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (to prevent browning of bananas)
  • 1/4 cup cornstarch (to thicken the pudding)
  • A pinch of salt
  • Optional: Crushed graham crackers or vanilla wafers for layering
  • Optional: Sliced fresh fruit for garnishing

Instructions

  1. Combine the cottage cheese and mashed bananas in a large mixing bowl. Use a fork or an immersion blender to mix until creamy, adding a splash of lemon juice to prevent browning.
  2. Whisk together the milk, yogurt, sweetener, vanilla extract, cornstarch, and salt in a separate bowl. Optionally, heat this mixture in a saucepan over medium heat until it thickens, then cool slightly.
  3. Fold the milk mixture into the cottage cheese-banana mixture until well combined, being careful not to overwhip.
  4. Spoon some of the mixture into individual serving dishes or a large bowl, optionally adding layers of crushed graham crackers or vanilla wafers
  5. Cover with plastic wrap or a lid and refrigerate for at least one hour before serving.
