- 2 cups cooked, diced boneless skinless chicken breast
- 1 ½ cups small-curd cottage cheese
- 1 cup sliced fresh mushrooms (white or baby bella)
- 2 cups roughly chopped fresh spinach
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F and lightly grease a baking dish. Sauté mushrooms in olive oil until soft, add spinach, and cook until wilted.
- In a large bowl, mix chicken, cottage cheese, sautéed mushrooms and spinach, mozzarella, garlic powder, onion powder, salt, and pepper until well combined.
- Transfer mixture to the baking dish, spread evenly, and bake uncovered for 30–35 minutes until hot, bubbly, and lightly golden on top. Let rest a few minutes before serving.
