  • 2 cups cooked, diced boneless skinless chicken breast
  • 1 ½ cups small-curd cottage cheese
  • 1 cup sliced fresh mushrooms (white or baby bella)
  • 2 cups roughly chopped fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish. Sauté mushrooms in olive oil until soft, add spinach, and cook until wilted.
  2. In a large bowl, mix chicken, cottage cheese, sautéed mushrooms and spinach, mozzarella, garlic powder, onion powder, salt, and pepper until well combined.
  3. Transfer mixture to the baking dish, spread evenly, and bake uncovered for 30–35 minutes until hot, bubbly, and lightly golden on top. Let rest a few minutes before serving.
