A creamy, protein-packed cottage cheese pasta salad that’s easy to make and perfect for lunches, dinners, or family meals.
Ingredients

- 12 oz short pasta (rotini or shells)
- 1½ cups small curd cottage cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- Optional: bell peppers, peas, shredded chicken, turkey ham, fresh herbs
Instructions
- Cook pasta according to package directions, rinse with cold water, and drain.
- Blend cottage cheese, olive oil, lemon juice, garlic powder, salt, and pepper until smooth.
- Toss pasta with the cottage cheese dressing, then fold in cherry tomatoes and cucumber. Chill 20–30 minutes before serving.
