Description

A creamy, protein-packed cottage cheese pasta salad that’s easy to make and perfect for lunches, dinners, or family meals.


Ingredients

  • 12 oz short pasta (rotini or shells)
  • 1½ cups small curd cottage cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • Optional: bell peppers, peas, shredded chicken, turkey ham, fresh herbs

Instructions

  1. Cook pasta according to package directions, rinse with cold water, and drain.
  2. Blend cottage cheese, olive oil, lemon juice, garlic powder, salt, and pepper until smooth.
  3. Toss pasta with the cottage cheese dressing, then fold in cherry tomatoes and cucumber. Chill 20–30 minutes before serving.
