Ingredients

  • 3 cups sweet corn (canned, frozen, or fresh cooked)
  • 1 cup turkey bacon or beef bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and finely diced
  • ½ cup sliced green onions
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, add the sweet corn, turkey bacon, cheddar cheese, bell pepper, jalapeño, and green onions.
  2. In a smaller bowl, whisk together the mayonnaise, sour cream, lime juice, garlic powder, onion powder, salt, and black pepper.
  3. Pour the dressing over the corn mixture.
  4. Stir until everything is well coated.
  5. Chill for at least 30 minutes to help the flavors blend.
  6. Serve cold as a side dish, appetizer, or party salad.

Notes

  • For extra heat, add cayenne pepper or more jalapeño.
  • Fresh corn gives the sweetest flavor but canned or frozen works well.
