  • 1 cup fresh cranberries (or frozen)
  • ¾ cup orange juice (freshly squeezed)
  • 1 tbsp orange zest
  • 3 tbsp honey or maple syrup
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Heat olive oil or butter in a skillet; sear chicken on both sides until golden.
  3. In a small saucepan, combine cranberries, orange juice, zest, honey, brown sugar, and garlic. Simmer 8–10 minutes until cranberries burst.
  4. Mix cornstarch with water, add to sauce, and stir until thickened.
  5. Pour glaze over chicken and simmer 5–8 minutes until cooked through (165°F).
