Homemade Cranberry Walnut Bread is a comforting, bakery-style quick bread made right in your own kitchen. This loaf is soft and moist with a tender crumb, packed with tart cranberries and crunchy walnuts in every slice.
Ingredients
2 cups all-purpose flour
¾ cup granulated sugar
1½ teaspoons baking powder
½ teaspoon salt
2 large eggs, room temperature
½ cup vegetable oil or melted butter
½ cup milk or buttermilk
1 teaspoon vanilla extract
1 cup dried cranberries
¾ cup walnuts, chopped
Instructions
Preheat the oven to 350°F and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt until well combined.
In another bowl, mix the eggs, sugar, oil or melted butter, milk, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.
Fold in the cranberries and chopped walnuts evenly throughout the batter.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50 to 60 minutes, checking for doneness by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
Allow the bread to cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely before slicing.
