Description

Crisp cucumber slices in a smooth, tangy dressing make this creamy cucumber salad a refreshing side dish perfect for summer meals, picnics, or casual dinners.


Ingredients

  • 2 large cucumbers, thinly sliced
  • ½ cup sour cream or Greek yogurt
  • 1 tbsp white vinegar
  • 1 tsp sugar (optional)
  • 2 tsp fresh dill, chopped
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup red onion, thinly sliced (optional)
  • 1 tsp lemon juice

Instructions

  1. Wash, peel (optional), and thinly slice cucumbers. Lightly salt and squeeze out excess moisture.
  2. In a medium bowl, whisk together sour cream or Greek yogurt, vinegar, garlic, sugar, lemon juice, dill, salt, and pepper. Add red onion if using.
  3. Gently toss cucumber slices with dressing until coated. Chill for at least 30 minutes before serving. Garnish with extra dill or black pepper if desired.

Notes

  • For extra crunch, add toasted seeds. Swap sour cream for Greek yogurt or a plant-based alternative for a lighter or dairy-free version.
