- 2 large cucumbers, thinly sliced
- ½ cup sour cream or Greek yogurt
- 1 tbsp white vinegar
- 1 tsp sugar (optional)
- 2 tsp fresh dill, chopped
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup red onion, thinly sliced (optional)
- 1 tsp lemon juice
Instructions
- Wash, peel (optional), and thinly slice cucumbers. Lightly salt and squeeze out excess moisture.
- In a medium bowl, whisk together sour cream or Greek yogurt, vinegar, garlic, sugar, lemon juice, dill, salt, and pepper. Add red onion if using.
- Gently toss cucumber slices with dressing until coated. Chill for at least 30 minutes before serving. Garnish with extra dill or black pepper if desired.
