Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of sliced mushrooms (white or cremini)
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 medium onion, chopped
  • 1 cup of heavy cream
  • 1 cup of chicken broth (or vegetable broth)
  • 1 teaspoon of dried thyme
  • 1 tablespoon of fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Start by prepping your chicken breasts. Pat each piece dry with paper towels. Season both sides with salt and pepper.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Add the chopped onion and garlic to the same skillet. Sauté for about 2-3 minutes until translucent.
  5. Introduce the sliced mushrooms and continue cooking for another 5 minutes until tender.
  6. Pour in the chicken broth and stir, scraping up any browned bits from the skillet.
  7. Lower the heat and slowly add the heavy cream. Stir to combine and let it simmer for about 5 minutes.
  8. Return the chicken to the skillet and allow it to simmer in the sauce for another 5 minutes. Sprinkle in the thyme and adjust the seasoning.
  9. Garnish with freshly chopped parsley before serving.

Notes

For lighter options, consider using skinless chicken thighs or substituting heavy cream with Greek yogurt or coconut cream.
