- 4 boneless, skinless chicken breasts
- 1 cup of sliced mushrooms (white or cremini)
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 medium onion, chopped
- 1 cup of heavy cream
- 1 cup of chicken broth (or vegetable broth)
- 1 teaspoon of dried thyme
- 1 tablespoon of fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
- Optional: pinch of red pepper flakes
Instructions
- Start by prepping your chicken breasts. Pat each piece dry with paper towels. Season both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Add the chopped onion and garlic to the same skillet. Sauté for about 2-3 minutes until translucent.
- Introduce the sliced mushrooms and continue cooking for another 5 minutes until tender.
- Pour in the chicken broth and stir, scraping up any browned bits from the skillet.
- Lower the heat and slowly add the heavy cream. Stir to combine and let it simmer for about 5 minutes.
- Return the chicken to the skillet and allow it to simmer in the sauce for another 5 minutes. Sprinkle in the thyme and adjust the seasoning.
- Garnish with freshly chopped parsley before serving.

For lighter options, consider using skinless chicken thighs or substituting heavy cream with Greek yogurt or coconut cream.
