- 4 pieces Chicken thighs or boneless breasts
- 1 cup Long-grain white rice
- 2 cups Chicken broth
- 1 medium Onion, finely chopped
- 3 cloves Garlic, minced
- 1 can (10.5 oz) Cream of mushroom soup
- 2 tablespoons Butter
- 1 tablespoon Olive oil
- Salt and pepper to taste
- Freshly chopped Parsley for garnish
Instructions
- Begin by heating a large skillet over medium heat. Add the olive oil and butter.
- Once the skillet is hot, add the chopped onions and sauté until translucent, about 3-4 minutes.
- Carefully add the minced garlic and cook for an additional minute.
- Place your chicken into the skillet and season with salt and pepper. Cook for 5-7 minutes on each side.
- After browning the chicken, pour in the chicken broth and bring to a simmer. Add the rice, spreading it evenly.
- Mix in the cream of mushroom soup and bring to a gentle boil. Reduce the heat to low, cover, and let it simmer for 20-25 minutes.
- Check that the rice is tender and chicken is cooked through. Adjust cooking time as necessary.
- Finally, garnish with freshly chopped parsley before serving.
Notes
For a healthier meal, consider using brown rice or low-sodium broth. Leftovers can be stored for 3-4 days in the refrigerator or frozen for 2-3 months.
