Ingredients

  • 12 oz pasta (penne or rotini)
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • Optional: cooked chicken, mushrooms, spinach

Instructions

  1. Cook pasta in salted water until al dente, reserving 1 cup pasta water. Drain and set aside.
  2. In a skillet, heat olive oil and sauté garlic until fragrant. Add crushed tomatoes, salt, pepper, and Italian seasoning. Simmer 8–10 minutes.
  3. Slowly stir in heavy cream and combine with pasta. Add pasta water if needed for consistency. Sprinkle Parmesan and stir until melted. Serve hot.

Notes

  • For added protein, include cooked chicken or turkey sausage.
  • To make dairy-free, substitute heavy cream with cashew or coconut cream and Parmesan with nutritional yeast.
