A delightful creamy salmon dish infused with Tuscan flavors, perfect for a quick dinner.


Ingredients

  • 4 salmon fillets, boneless and skinless
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons lemon juice
  • Fresh basil, for garnish (optional)

Instructions

  1. Season your salmon fillets with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the salmon fillets and sear for about 4-5 minutes per side, or until golden brown and cooked to your preferred level of doneness.
  2. Transfer the salmon to a plate and cover it loosely with foil to keep it warm. In the same skillet, toss in the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sun-dried tomatoes followed by the fresh spinach. Cook for another 2-3 minutes, or until the spinach is wilted and the tomatoes are heated through.
  4. Pour in the heavy cream and give it a gentle stir. As it heats up, sprinkle in the grated Parmesan cheese and Italian seasoning. Keep stirring until the cheese melts and the sauce thickens slightly.
  5. Add the cooked salmon back to the skillet, spooning the sauce over it. Allow everything to bubble together for a minute, then finish with a drizzle of lemon juice and a final gentle stir.

Notes

Refrigerate any leftovers in an airtight container for up to 3 days. For freezing, avoid adding cream until reheating.
