- 4 salmon fillets, boneless and skinless
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 tablespoons lemon juice
- Fresh basil, for garnish (optional)
Instructions
- Season your salmon fillets with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the salmon fillets and sear for about 4-5 minutes per side, or until golden brown and cooked to your preferred level of doneness.
- Transfer the salmon to a plate and cover it loosely with foil to keep it warm. In the same skillet, toss in the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sun-dried tomatoes followed by the fresh spinach. Cook for another 2-3 minutes, or until the spinach is wilted and the tomatoes are heated through.
- Pour in the heavy cream and give it a gentle stir. As it heats up, sprinkle in the grated Parmesan cheese and Italian seasoning. Keep stirring until the cheese melts and the sauce thickens slightly.
- Add the cooked salmon back to the skillet, spooning the sauce over it. Allow everything to bubble together for a minute, then finish with a drizzle of lemon juice and a final gentle stir.
Notes
Refrigerate any leftovers in an airtight container for up to 3 days. For freezing, avoid adding cream until reheating.
