Description

Soft vanilla cookies topped with crackly caramelized sugar for a bakery-style treat you can make at home.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional 1/4 cup granulated sugar for topping

Instructions

  1. Preheat oven to 350°F and line a baking sheet.
  2. Cream butter with sugars until fluffy. Mix in heavy cream and vanilla. Gradually fold in flour, baking powder, and salt. Chill dough 30 minutes.
  3. Scoop dough, flatten slightly, and bake 10–12 minutes. Cool cookies on tray.
  4. Sprinkle with sugar and caramelize with a kitchen torch or broiler until golden. Let cool before serving.

Notes

  • Chilling the dough helps cookies hold shape.
  • Caramelize sugar just before serving for best crunch.
  • Can freeze baked cookies without topping for up to 1 month.
